It’s difficult to cook, but you can always go to a restaurant: ask for a fario trout, not an iridea or salmonata trout. What’s the difference?Well, aesthetically, the fario trout has colourful scales with red and black dots. The taste, though, is totally different. If you don’t like fresh-water fish, you have to taste a fario trout (which is rarely caught in fish-farms since it comes from the rivers), or marmorata (even harder to catch).
In Valli del Torre, you may not find the red and black doted fario, but just the simple one which in this area they still cook in an exquisite way. So buon appetito!
