Malloreddus alla Campidanese (a type of pasta from Sardegna).

Malloreddus alla Campidanese (a type of pasta from Sardegna).
The Malloreddus are the most famous pasta in Sardinia. This type of pasta looks like little gnocchi with a small hole that goes through them so as to better retain the sauce and to give a pleasant rough sensation when you eat them.
These gnocchetti can be served in many different ways. In Campidano, they are served with a sauce made from veal and pork cooked in lard with onions, tomatoes, peperoncino and rosemary.
The Malloreddus are served hot, and are sprinkled heavily with pecorino cheese (naturally the Sardinian pecorino cheese).
